Greek Pasta Salad - a quick and easy pasta salad that's packed with all of the Greek flavors we love!
Happy Monday morning y'all. It is the second day into the 2017 New Year and i see all my friends resolutions being posted to Facebook. I don't know about y'all but I don't do New Year's Resolutions. I find that they don't work for me. Seriously, if I feel the need for a change I just decide to do it and if I am being completely honest with myself...I am pretty happy with where things are at for me. Sure, I could loose some weight, I could save more money, and so on but I am comfortable with where things are. So, no resolutions for me...or if I had to have one I would resolve to keep working on keeping things happy and healthy in my family and life!
With that being said for those of you who are looking fora fun new recipe to add to your collection; I bring you Greek Pasta Salad. I love this salad and have it almost weekly during the summer months. But with the last 2 weeks of snow and overcast weather I needed a little brightness in my life. So, I went to the supermarket got some fresh veggies and made a wonderfully easy and simple Greek Pasta Salad.
- 1 box bow-tie pasta, cooked
- 4 cups tightly packed baby spinach leaves
- 2 cups Feta cheese crumbles
- 2 cup cherry tomatoes, halved
- 1 can rinsed canned chickpeas (garbanzo beans)
- 1 cup Greek Dressing
- Place pasta in large bowl.
- Add remaining ingredients; mix.
