Sheet Pan Oven Baked Ratatouille
My Sheet Pan Oven Baked Ratatouille is an absolutely delicious roasted dish and beloved side dish with layers of bright colors, bold flavors and healthy favorites like eggplant, squash, bell peppers and zucchini. It's healthy yet hearty, comes together in less than an hour.
Do you have a picky eater who doesn’t like eating their vegetables? Well not today or with this recipe.
- 1 zucchini
- 1 eggplant
- 1 bell pepper
- 1 onion
- 1 yellow squash
- 4 potatoes
- 1 Tablespoon minced garlic
- 2 Tablespoons lemon juice
- 1/2 tsp ground thyme
- 1 teaspoon dried rosemary
- 14oz can crushed tomatoes
- 1/2 cup feta cheese
- 2 Tablespoons white wine vinegar
- 5 Tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Preheat oven to 400°F.
- Finely chop onion; dice the squash, zucchini, eggplant, potatoes and bell pepper.
- In a large bowl, combine all of the vegetables and add crushed tomatoes; top with white wine vinegar, olive oil, lemon juice, and seasonings; toss to evenly coat.
- Pour the entire mixture onto a baking sheet pan; roast in the oven for about 30 minutes.
- Crumble feta over the top and cook for another 10-15 minutes or until the vegetables are tender.
- Serve with couscous, pasta and/or bread.
Do any of y’all have kids in college who are living on their own? Kids that tell you they are doing fine but then suddenly call you saying that not only are they sick but they paid their rent and are now broke and have no food? Yeah we have one of those. She has been on her own at college for a year and a half now. She hasn’t always had the easiest time handling things. And this weekend was no different.
Miss Kalie called me on Thursday explaining that she was in the hospital again for her siactic nerve pain and that the hospital wasn’t helping her. She also mentioned that she paid her rent late but did get it paid and would have any money for food now...so what is a step-mom and dad to do? Throw in the fact the I’m a food blogger and well you can imagine that I had to fix her food situation. So, Friday night after work Steve and I went shopping then came home and prepped a bunch of freezer crock pot meals for her. Saturday morning we loaded everything into the car and headed the hour and a half drive to college. We were happy to do it! BUT then we got to her apartment...then our moods changed.
Y’all as we lugged in the cooler filled with prepped meals and the bags and bags of groceries we went straight to the kitchen. Y’all my eyes damn near popped out of my head. She literally has more food than I do in my pantry...and I am a food blogger who isn’t on a budget like hers. She had all name brand items and it was all junk food. Literally not a single fruit or vegetable in sight. But we did see pop tarts, White Castle burgers, ice cream, uncrustable sandwiches and well you can image. I was furious! She should have told me she had wasted her money, bought crap and now has no real meals.
Now granted this is my step-daughter so it is not my place to say anything and I kept my mouth shut but my husband could see that seething anger under my surface. Why are kids like this? Did she not think that I was going to see she had food? Ugh, enough venting!
Anyhow, by the time we got home is was after 7 PM and I needed something that was quick and easy so we opted for a meatless meal. Y’all it was wonderful!
This Sheet Pan Oven Baked Ratatouille is delicious hot, warm or at room temperature, and tastes even better after a day in the refrigerator. Perfect for serving alongside roasted or grilled meats, but it is also makes a super vegetarian supper. We served it with couscous but it can also be eaten with pasta or topped with a poached egg and served with a hunk of bread.
