Roasted Lemon Broccoli

Oven roasted broccoli for a side dish? What more could you ask for? How about having it coated in zesty lemon juice and Parmesan cheese? Roasted Lemon Broccoli!
Have I mentioned that I love fresh vegetables? I do! Seriously, like there is never enough. Here let put this into perspective for you. I buy produce from Sprouts, have my own garden, buy produce from the Bountiful Baskets Co-Op, visit the local farmers markets on weekends and so on!
This weekend I found a new little market. Score! One of the vendors there had the most beautiful broccoli crowns. I couldn't resist and had to bring some home. With that I decided to keep things simple and make Roasted Lemon Broccoli.
This is another one of those dishes that I've made for years. Y'all know the ones I forget to post. I love how the roasted broccoli still has some crunch to it and the flavors blend wonderfully making this an ideal side dish for any meal.
- 2-3 lbs broccoli florets
- 3 Tbsp olive oil
- 1 Tbsp minced Garlic
- 1/2 cup Parmesan cheese
- Juice of 1 lemon (about 4 Tbsp)
- 2 lemons cut into wedges
- Preheat oven to 425F.
- Mix the broccoli, olive oil, garlic and 1/2 of the cheese together; toss to combine.
- Arrange broccoli in a single layer on a baking sheet.
- Bake for 15-20 minutes.
- Remove from oven sprinkle with remaining cheese and squeeze lemon wedges over the broccoli.
