Oven Roasted Garlic & Mushroom Green Beans

I love me some green beans but sometimes y’all need to jazz them up a bit. This is just the recipe that does that! Y’all have got to try these Oven Roasted Garlic and Mushroom Green Beans.
So today was our town’s Christmas parade and Courthouse Lighting. That means we had a busy long day. Miss Emma was in the parade because of cheer so that meant we had to get there an hour early. Then the parade lasts two hours. Next we wasted a 2 hours walking through the little local and antique shops. Then we has to stake out a place for us to watch the lighting. So, my point is we left at 11 am and didn’t get home until after 7 pm. We were starving. Me however, I thought ahead, I put a ham in the crock pot and planned these awesome green beans as a side dish. So, 20 minutes after walking through our door we had a delicious dinner in front of us.
Combine green beans, mushrooms and garlic.
Toss in olive oil, salt and pepper.
- 2 lb fresh green beans
- 8 oz. sliced baby Bella mushrooms
- 1 heaping, teaspoon minced garlic
- 1/2 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon Pepper
- 1/4 teaspoon onion powder
- Preheat oven to 400°F.
- In a large bowl, combine, green beans, mushrooms and garlic.
- Drizzle olive oil over the green beans, sprinkle on salt, pepper and onion powder.
- Toss to coat.
- Place green bean mixture on a baking sheet and bake for 20 minutes.
