There are certain things that just completely summarize summer. These Lemon Raspberry Cobbler Cupcakes do just that. The lemon and raspberry flavors blend just beautifully!
Summer is in fill swing. The kids have been out of school for awhile, competition cheer season has ended, my garden is in full bloom and my dogs are going into puberty-the dominance battle’s have begun….and I tend to think I am loosing that battle. Mr. Tanner and Mr. Spock have hit the one-year old mark; the testosterone has kicked in and the battles are becoming a daily occurrence so of course I had only one choice. Time to whack the manhood - aka neuter the boys.
So, I call the local shelter which hosts a low cost spay and neuter clinic and made the appointment. Step 1 a success!
Step 2 - make it to the appointment without killing them - marginal success. I mean they aren’t dead but they are now extremely fearful of my shoes; doesn’t matter which shoe, so long as it comes off my foot and they see it the crowd runs in all different directions, they scatter like ants! Y’all, I am 5’4 and I have to have weaponry to separate the two while the they’re in battle, hence the fear of shoes. Anyhow, we finally get to the day of the appointment…I was not prepared for this. But like a trooper I pushed through it.
So, y’all they tell me to be there at 7:15am - awesome, I’m a morning person that’s no problem. My hubby is out of town in Boston on business but I walk my dogs all of the time, I can handle this. So, the time comes to load them up in my car; I put the leash on Spock and open the front door and BAM! I am slammed into the door, Spock gets trampled, yikes in pain followed by instant attack mode as Tanner leaps like a gazelle over him, through me and out the door. Fun times for all. Tanner then spots Miss Emma’s cat and the chase is on! I fly down the front steps, throw Spock in the car slam the door on him and begin to run down the block screaming like a mad women spewing vile threats of death and dismemberment as I chase Mr. Tanner down the street. Finally Tanner stops, sees me, we make eye contact and I see a moment of weakness in his eye. So, immediately without thought I whip off my shoe and ta-da I have won the battle…kinda. He sees the shoes and I swear if he could talk he literally said, ‘oh crap’, he slowly turns towards me and starts at a jaunt towards me, I go into a football tackle stance (hoping to catch him as he gets near me), big mistake on my part, huge. Tanner now thinks we are playing…a wrestling match; his leisurely jaunt has turned into full blown Mac-truck status; the joust battle was on BAM! He won…at this point he is literally luck there are witnesses because I would have killed him right then…well as soon as I caught him. At this time, Mr. Tanner must have realized that I had lost all of my patients with him because at that point his went to the back of the car and was nicely seated waiting for me to open the door for him to get in. Freakin’ dog!
So, okay we are finally in the car, we get to the clinic and I am still only one person trying to handle two (2) dogs. So, I think I will be smart I leave the dogs in the car and go inside to check in. Piece of cake, I get the paperwork filled out and so on and then they say lets make this easy and bring both of them into the room at the same time so we can get weights and so on and then we will take them back together. Sweet! They get it. So, I go out to the car both dogs are beautifully behaved. The get out together, don’t tangle up with each other, nothing. We walk over to the field they do their business, life is once again blissful. We head over to the clinic, I am praising them, y’all know the “good boys”, “momma is so proud of you” and “good dog”, when out of nowhere comes the hound of hell! I kid you not, this little chihuahua that is all of 4 pounds on a good day, comes rip roaring down the sidewalk, not on a leash, with the joules of a ravenous javalina, in full attack mode. I panicked! Mr. Tanner and Mr. Spock could literally eat this dog in one bite, top that the the aggression I already see at home and basically we are screwed. So, I immediately begin to back track with dogs in tow. Thankfully the other dog’s owner saw what was happening and easily ran over and simply picked her dog up. Holy crap that was close. But then said chihuahua begins to squeal like a stuck pig; seriously y’all I did not know a dog could hit those tones; apparently nether did my dogs. They stopped in their tracks, both heads turned to the side and they simply stared in wonderment. Finally a break, the vet tech then come outside and asked the lady to wait in her car with her lovely chihuahua until they were ready for her. At that point I was able to walk them in and off they went.
The rest of my day went of without a hitch until pickup time that is. They tell you to come back at 3pm; they go over the aftercare instructions, give you pain meds and then tell you to go wait by the side door and they will bring the dogs outs. So, I pull my car as close as possible, open the back door up lay out the blankets for my boys and wait. They bring out Mr. Spock and he is obviously dopey but happy to see me. I carefully lift him into the car; put on his cone of shame and then wait for Mr. Tanner. They bring out other dogs, and more dogs, and more dogs, finally Mr, Tanner is brought to the door. He flops down and refuses to move at that point. The tech looks at me a chuckles “he is having a hard time waking up”. Ha ha ha! You’re so funny runs through my mind. So, I try to get him to get up and walk to the car. He isn’t having it. Finally, I decide okay I will pick him up and carry him. Ha, why I thought that is beyond me. Finally, I manage to wrap my arms under his armpits and I lift him up. I begin to waddle him over to the car, progress! That’s when I saw the fountain. It was a lovely glistening golden fountain…that’s right, Mr. Tanner was peeing everywhere..and when you are carrying him under his armpits with his legs dangling down, pee goes everywhere. On him, on you, on cars….fun time y’all. Needless to say I was not prepared for my day. So, as I finish this post let me tell y’all I am completely excited at the thought of being down with my day, sitting in my hot tub and stuffing my face with these amazing cupcakes. They will truly brighten any day, even a day like mine!

- 1/2 pkg of 16 oz refrigerated sugar cookie dough
- 1/2 cup flour
- 1/4 cup packed light brown sugar
- 1 tsp vanilla
- 1/2 cup slivered almonds
- 1 pkg lemon cake mix, plus ingredients to prepare it
- 1 can 12oz raspberry pie filling
- Preheat oven to 350 degrees F. Line 24 standard muffin cups with liners.
- Prepare topping by combining cookies dough, flour, brown sugar and vanilla in a large bowl. Blend well; stir in almonds; set aside.
- Prepare cake mix according to directions. Spoon batter evenly into prepared muffin cups.
- Bake for 6 minutes.
- Remove from oven and place 1 Tbsp raspberry pie filling in the center of each muffin cup.
- Sprinkle topping evenly over partially baked cupcakes.
- Bake 15 minutes or until topping is browned and cupcakes are set.
- Cool cupcakes in the pan on wire racks for 10 minutes. Remove from pans and cool completely on wire racks.
