Instant Pot Meatball Soup

So we are into the middle of December. We are in fill swing of Christmas Parties, Basketball Season and life in general. This week is going to be crazy. Miss Emma has a double-header she has to cheer from tonight, my job’s company Christmas party is Thursday, Mr. Steve’s is Friday, Miss Emma has to participate in our local ‘Shop With A Cop’ on Saturday morning...my niece has a birthday on Thursday but her party is Saturday afternoon. Busy busy! So, tonight between Miss Emma’s double-header and dinner, I also have to make 48 candle center pieces of my job’s party. Yes 48 center pieces. But serious I am taking the easy route. Mason jars turned into candle holders. I will post pictures after Thursday with a little description on how to make your own. I am hoping they will be super cute!
Anyhow, as I was saying tonight I will have no time to make a dinner but I really don’t want to feed everyone fast food either. So, that’s when a soup like this Instant Pot Meatball Soup is perfect! So easy....y’all literally throwing everything into the Instant Pot and cook it for 10 minutes and your done! Pretty freakin’ awesome if y’all ask me!
Combine everything in your instant pot.
Set pressure to high for 10 minutes.
When the timer beeps, vent the steam.
This soup is seriously a meal in itself. You’ve got your meat, veggies and a little bit of carbs. Awesome! Seriously get to it, grab your Instant Pot, bowl and spoon and chow down!
- 1 cup carrots, slice into rounds
- 1/2 cup celery, sliced
- 1/2 cup white onion, chopped
- 25 frozen meatballs
- 1 1/2 cups ditalini pasta
- 5 cups chicken broth
- 2 cups water
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1 teaspoon dried Italian Seasoning
- 1 tablespoon diced scallions
- Place everything into your Instant Pot and place the lid on.
- Using the manual setting, choose high pressure and set the timer for 10 minutes.
- When the timer is complete use the quick release to vent.
