Holy Moly y’all it is Friday! I am normally excited for Friday but this is the last Friday of summer for Miss Emma. She starts school again next week. You can feel the excitement within our house, the feeling of joy and the hopes for another great school year! I have never been so ready for school to start!
Miss Emma, however, is not feeling that so much! She isn’t ready for summer to be over; she is massively bummed because she got the “crappy” lunch; none of her friends are in her classes and “what do you mean I need to get into the habit of going to bed early and getting up on time?” “God Mom! I’m not 2 years old!” Oh yes you can feel the joy and love (let me just say right now- I am sorry mom for anything and everything I ever did and said, especially said, between the ages of 13 and TBD)…I however, am doing the happy dance, a jig of joy if you will!
Can't you just see her joy oozing?!?!?!?
Okay, here are the featured recipes for this week’s Easy Meal Plan. It’s time to make my shopping list and hit the stores; and YES I will still be doing my jig of joy through the isles; please don’t judge!
Chicken Quinoa Bake is a simple dish that requires no pre-cooking – all the ingredients are combined in a casserole dish and the result is super tasty, healthy, and family friendly! This is another great choice for busy weeknights that doesn’t involve much prep.

For a dish packed with so much flavor, this is actually pretty easy to make. There are only six main ingredients for the chicken and sauce and they blend together perfectly to give you a mix of creamy, garlicky, mushroomy goodness in each and every bite. Also, one of the six ingredients in bacon, so that pretty much tells you everything you need to know.

It’s difficult to say no to a good sandwich. Particularly when the bread is fresh but slightly warmed, packed full of really good skirt steak and layered with a delicious vibrant green chimichurri sauce. Alan keeps texting me about this Skirt Steak Sandwich that he has for lunch while I am at work. He tends to do that when he’s making good food and I’m stuck in the office. I finally caved and demanded it for dinner…. during no junk June no less….No regrets.

My Ultimate BLT starts with toasted sourdough bread slices, slathered with salsa verde aioli, topped with crispy fried green tomatoes, romaine lettuce leaves and what else, a handful of smokey salty bacon. Fried green tomatoes are a southern favorite, and if you haven’t ever tasted them, you are in for a treat. Sliced fresh tangy green tomatoes are dredged in flour and panko bread crumbs and fried until they are golden and crusty on the outside.
I don’t know about you but Fridays are my freebie days. This kitchen is closed!
Chicken Quinoa Spanish Skillet – sautéed chicken blended with vegetables, quinoa and cheeses and baked to perfection. I know what y’all are thinking, a casserole? But trust me on this one, this is a casserole that y’all are gonna love! It’s healthy, nutritious, packed with flavor and super easy to make!
