Cilantro Lime Marinade
A flavor packed marinade that’s perfect for your grilled flank steaks, chicken and fish dinners.
My family loves Chipotle style Mexican food. Steak bowls are our favorite! So my goal has been to recreate the steak flavor in them. After man attempts I think I have nailed it; if not, well…it’s really darn good! Packed with chopped cilantro, fresh squeezed lime juice and minced garlic, this marinade works wonderfully with steak, chicken and fish!
Finally my life is calming down, Mr. Chris (my son) is still here visiting us and I couldn't be happier to have him here. BUT I will say it is very different. I mean, he is my first born and will always be "my baby" but he has been on his own for years; been out of state, over 1,000 miles away, for the last 3 years; he is a man now. Having said that my relationship with him is changing...still a mother son relationship, but with mutual respect added into it which brings more of a friendship element. I find myself beaming with pride and yet longing for days gone by. It's weird really; happy and sad; bittersweet perhaps yet I am looking forward to the new dynamic between us. I don't know maybe I am just an old sap who is having trouble seeing that my baby is a grown man. Maybe it's because he has been gone for so long that I knew he had grown but it had never been truly slapped in my face...I am not sure but I can tell you that I am enjoying my time with him while I can! So per his request together we are making dinner and this marinade is on the list!
Seriously, y'all what's not to like about cilantro, lime juice, garlic, olive oil, and just a hint of sweetness and a hint of spice - duh, nothing! Give this marinade a try; tell me what y'all think!!
In a medium sized bowl, mix cilantro with remaining ingredients.
Place the meat of your choice into a large zip-loc bag; add marinade and make sure meat is coated.
Seal the bag and refrigerate overnight.
Remove meat from marinade and grill to your liking.

- Juice and zest from 2 limes
- 1 bunch of fresh cilantro
- 1 Tbsp minced garlic
- 1 tsp salt
- 1 tsp pepper
- 1 tsp brown sugar)
- ¼ cup olive oil
- Chop cilantro.
- In a medium sized bowl, mix cilantro with remaining ingredients.
- Place the meat of your choice into a large zip-loc bag; add marinade and make sure meat is coated.
- Seal the bag and refrigerate; let it marinate at least 2 hours or overnight
- Remove meat from marinade and grill to your liking.
