Cedar Plank Wrapped Smoked Salmon
A sinfully sweet marinade with just a hint of a spice coats beautiful salmon fillets wrapped in cedar planks that are the slow smoked in your BBQ Grill.
When it comes to summer I think about sunshine, vacations, warm weather, pool parties and of course BBQs! It doesn’t matter is I am at home, at a party or even camping, in my world, summer means cooking outside.
So I don't know about y'all but this summer is a none vacation for summer for my family....literally I am so sad! We've been so busy with life and so on that we just haven't had the time to plan anything and now my garden is in full-swing and the thought of leaving and having my wilt or die makes my heart break. So we are home bound but non the less I am making the best of it. So, I took a personal day off of work and I promised myself I wasn't going to work on my blog, wasn't going to clean house, wasn't going to worry if I had completed everything or anything for that matter on my to-do list...and I must say the day started off harder than hell! I am a creature of habit and it took everything, lieterally putting my phone, ipad and laptop away and forcing myself to just let go. So, off I went to start my day with of course some Dutch Bros, got have my chai tea, and then Miss Emma and I headed to the nail salon. Manicures and pedicures for both please.
It was during my pedicure that I realized how worked up I was going over everything in my head, hoping that I had done everything needed at work, thinking about my Step-son moving back home and it dawned on me...I am sitting here next to this incredible young woman who wants my attention and time and I can't even give her my time. How much longer do I have with her before she stops sharing her thoughts with me or has time for me even? From here I started to let guilt creep in but I thought to myself 'No! your are doing the best you can with your situation right now. You are not a bad mom. Don't even go there!' I know crazy right? But I also know that we've all had those thoughts at one point or another in our lives. Anyhow, it was in this moment that I decided that I am truly going to enjoy my day and time with my family. We had our manis and pedis, got lunch, did some shopping then we came home and cooked dinner together, the entire family watched a movie together afterward. It was fabulous! I hadn't realized how much I had let the day to day crap overwhelm me and how little I was actively there for everyone.
It is because of this new realization that I am making myself make time to get back to the things I value and enjoy. So, tonight I am taking the time to make a dinner my family loves! Cedar Plank Smoked Salmon. I have found these awesome cedar planks that you can actually wrap around food and smoke in your BBQ. They are so simple and easy to use. - 2-3 lbs fresh salmon fillets
- 1/2 cup soy sauce
- 2 tsp red pepper flakes
- 2 tsp mustard
- 1 Tbsp minced garlic
- 1/3 cup oil
- 1/3 cup brown sugar
- 4 soaked cedar wraps
- In a small bowl, combine soy sauce, pepper flakes, mustard, garlic, oil and brown sugar; mix well.
- Place salmon in a gallon size ziplock bag, pour marinade over it, seal and allow to marinade for about 20 minutes.
- While the salmon is marinating soak your cedar planks.
- Preheat your grill to about 400 degrees F.
- Take each piece of salmon and wrap in up in a cedar plank; tie with twine to secure.
- Grill salmon over low heat for about 20 minutes or until cooked to your liking.
