Bacon Wrapped Pineapple Bites – a 60’s style party appetizer with it’s easy, savory and sweet flavors, it is a perfect finger food that stands the tests of time!
It’s a good thing that my family likes bacon and pineapple, because I’ve got a ton of these in my fridge right now! Talk about a party gone wrong; my dear friends Michael and Vicky were having a pirate themed party this last Sunday. So of course not only did I RVSP but I offered to bring a dish of some sort. I decided that I would bring Bacon Wrapped Pineapple Bites which are perfect for any party.
So I prepped and cut all the pineapple, wrapped the pieces in bacon and them ready to pop into the oven when the phone rang. The next thing I know we are headed down to Phoenix to handle an issue with my step-son and ex-wife. Yes, I call his mom my ex-wife! It’s crazy but I actually deal with her more than my husband does and trust me it’s for the best. They cannot handle each other and I find that since I don’t have the emotions attached I can truly focus on what’s best for the kids and her and I together work hand in hand to make sure we do what’s best…so yes she is My Ex-Wife! LOL! Anyhow, it’s literally less than an hour until the party – we are not making it back in time for the party. Hence I am now left with a fridge full of bacon wrapped pineapple bites.
Bacon Wrapped Pineapple Bites are an ideal party appetizer. Guests love them, they are so easy to make and super tasty to boot! Top that off with the best part, that they can be made ahead of time and then popped into the oven right before serving.
- 12 bacon slices, cut in half
- 1 pineapple cut into 24 pineapple chunks
- Toothpicks for securing
- Preheat oven to 400°F.
- Line baking sheet with baking parchment or aluminum foil.
- Core, peel and cut pineapple into chunks.
- Cut bacon strips in half.
- Wrap each pineapple with piece of bacon, secure with toothpick and place on lined baking sheet.
- Bake until bacon is crispy, about 20-25 minutes.
