I cook because my family can't-No literally they can't!
Growing up my family ate out every night, every day...that's right 365 days a year. If and that’s a big IF, my mother decided to cook, it usually consisted of a chicken being cut up, thrown in a casserole dish, salt and pepper thrown on it and then microwaving. Let me tell you microwaved chicken turns grey and tastes awful.
I thought I hated chicken! Turns out I hate my mother's chicken! Actually I hate ALL of her cooking! Now don't get me wrong, I love my mother but her ability to cook is awful and she knows it and admits it!
The bonus for her is now all family dinners have been thrown on my shoulders. I would say it is on my sister and I's shoulders but apparently my sister inherited that non-cooking gene. After several years of raw turkey on Thanksgiving and Mexican food themed Christmas dinners the entire family voted and I lost. Now all dinners are my job! Ha ha!
So, in an effort not to starve or gross out my family I became a cookbook junkie. Let me tell you, Goodwill on a half price weekend, you can score a TON of cookbooks for next to nearly nothing. I admit, I had a problem!
Anyhow, I have taught myself, with the help of the cookbooks, all the basics that are necessary to feed my family. I have tried the fancy stuff but find that the down home, home cooked, comfort foods are the meals my family loves.
I also have learned that working a 9 to 5 puts my time on lock down. So, I have tweaked basic recipes to allow myself to be able to cook them quick while still making my family think I busted my tukas to get it done.
Qualifications....I am not truly sure I am qualified to do this. I can tell you that I haven't killed anyone......yet! My family inhales dinner. At pot lucks I always get asked for the recipe to whatever I bring. I have been able to change my families eating habits which resulted in my husband being taken off of his pre-diabetic medication.
Basically, I can tell you this. I love food and I love to eat it! I am not one of those females that goes to a restaurant and orders a salad.... well I do...but it is a starter followed but a full course meal!
